Firewall resets every week?

A bit about my system first;
I have one entire server devoted to each service.
One pfSense
One Asterisk/FreePBX
One Domain Controller
One Storage ServerAnd various Cisco Phones/desktops.
It seems to me that my firewall just becomes an impregnable wall of "Holy crap everything is down but internal is up".
To elaborate, Monday morning without fail, our phone system stops receiving calls. We can call out and audio is perfect.
I found out the other day that I needed to select an additional option under my SIP settings to allow anonymous phone calls which immediately fixed the problem where our calls would say "This service is unavailable" (or something to that effect).
However THIS Monday, once again to my dismay, the phone system went down again. This time we were able to call out, but rather than automatically denying an incoming call - the person calling us would get a 20-30 second silence followed by a message that denied service.
So far, I've found that the only fix for this is restarting the router. So it leads me to believe that it has to be a problem with the firewall. Interestingly enough, Asterisk saw the calls this week and just refused to send them to the phones. Resetting phones and Asterisk did nothing. Had to reset pfSense again.
Any ideas?
