If it's exactly every hour I'd look at the crontab and see what's being triggered. Or just at the system logs which should show cronjobs being fired.

Hmm, I don't see HAProxy shown there but that crash looks exactly like this: https://redmine.pfsense.org/issues/15457

What packages do you have installed?

Does it actually crash exactly every hour?
