Soon I plan to learn a little about Proxmox and of course I'll install pfSense there. I plan to play with pfSense+ to be exact using home subscription (because it is for home use) that I'll assign to this vm.

And here is my question how much can I change in the vm configuration before pfSense+ will start complaining that it is on a different device. At least I guess it will happen. I know that I'll play with the number of cores, RAM and NICs. I won't try to destroy already created vm, but I'll change mentioned parameters. At the same time it would be good to have more general knowledge about possible changes that won't break subscription.

Or there is some kind of way to migrate subscription that I don't know about and in that case my question can be ignored :)

I use pfSense+ on a Hyper-V VM and have changed cores, NICs, and memory w/o issue.

Adding new hardware devices to the VM, such as NICs, will likely change the NDI and hence the subscription. Cores or RAM should not.
I suggest adding as many NICs as you might need before you start. You can always simply leave them disabled in pfSense or even disconnected in Proxmox.
