Parallels Desktop for Mac?

I'm trying to do some "test lab" work using Parallels Desktop for Mac with 4 bridged NIC's in each VM, a couple VM's for testing some CARP configs and running into some issues. Kernel panics and the like (I've got one VM that just hosed itself.., after an fsck I just get a login prompt).
Anybody out there doing this successfully?

We've been running pfsense 1.2b2 & rc1 inside Parallels v2 3188 on a Mac mini 24/7 for a couple of months with good success.
Can't get CARP to work yet (bridged ethernet).
Using DLink USB > ethernet adapters & driver from sustworks.com -
I have issues setting up a test and/or dev environment under parallels. I get kernel panics once I install it to the hard drive partway through updating to the latest CVS (during the auto-update fresh install). Anyone else have better luck or a guide?
I'm on Parallels 3.0 build 4560.
