Connecting over openvpn knocks out the wireless adapter
-
Connecting over openvpn causes the wireless adapter to become disabled. Which obviously causes the internet and the vpn to drop. Once re-enabled - everything starts working. Has anyone come across this? Only happens on a few laptops and not on all of them.

I've never seen that happen before, but you're probably more likely to get a relevant response if you post on the actual OpenVPN forum rather than here. They would see a wider variety of OpenVPN clients.

Perhaps some vendor customized driver code that kills the Wireless when it detects another Interface has come up?
It probably thinks an Ethernet connection has linked up when the OpenVPN interface comes up. -

It probably thinks an Ethernet connection has linked up when the OpenVPN interface comes up.It does seem like this is the problem I am facing. Does anyone know of any solutions? I have googled this and came up empty handed

My laptop also disconnects wireless when Ethernet cable is plugged in. However, it doesn't do it with OpenVPN.
Try adding more TUN/TAP adapters.

How would I go about doing that? And why do you think that would solve the issue?

In Windows, you should have an "Add a new TAP virtual ethernet adapter" shortcut among your programs list (mine points to "C:\Program Files\TAP-Windows\bin\addtap.bat").
Adding an extra adapter could perhaps be a workaround for you, as the OpenVPN connection only uses one of them, the other one will stay disconnected always, maybe fooling your stupid wireless driver about connection state. It's just a try.
