Let a provider connect to my servers.

Hi.
Iam really new with VPN access and I need some advice.
I need to configure my PFSense to give access to my servers to different solutions providers.So first. which one I choose? OpenVPN or IPSec?
Second. Which is the correct configuration? There is anything like "VPN Best Practices"?
Third how do I restrict the access?
I don't want provider A could gain access to provider B servers and viceversa. I guess this will be a firewall rules job. It´s correct? -

Run the wizard. It takes care of most things. There are a million tutorials online. Netgate offers their own:

I had seen some of this tutorials. They are Ok. I have follow some of them and get a VPN work. But I couldn't yet understand if this one (the VPN I manage to make work) is my best solution. There are a lot of different options and configs that I need to understand in more deep.

I configure a VPN. Pheraps I'll change some configs in the future cause I don't fully understand how it work.
