Is there any way to get the old RRD graphs back? The new graph might look prettier, but the ability to see multiple (period) graphs at once was far more useful to me, and I in general preferred the old graph look, even if you couldn't get precise stats by pointing at it.

Multiple periods is something that's being considered. You can open multiple browser windows to the same page and get same, not as convenient.

In the old RRD graphs we where able to see how many data was being used during the last week/month/year/4years.

Is it possible to get this data in the new "monitoring" tab, to see how many data is being used per interface?The data that RRD keeps regarding traffic totals is less than accurate due to its averaging of data over longer periods of time. It gave a good general number, but it was certainly not the most accurate one.
With pfSense 2.3.2 now being released, there is a new Traffic Totals package based on vnstat that can be installed to provide more accurate totals of traffic on an hourly (past 24 hours), daily (past 30 days), and monthly (past 12 months) basis. I'm sure yearly data could be added down the road, if really necessary.
The data is presented in both graph and table forms, and can be shown for multiple interfaces at the same time if desired. Graphs can be switched between overlapping lines or neighboring bars, with stacked bars as an option as well.

I plan to circle around and improve Status >Monitoring when I get the chance, but as far as historic data calculations go, virgiliomi nailed it.

I'm assuming that package needed to be installed to begin with and wouldn't import the RRD data first?

The Traffic Totals package doesn't use RRD for data, it uses vnStat.
