How can I either Whitelist a server who pings me to determine my server is up?

They have a list of their servers here

      http://uptimerobot.com/locations

Alternatively, is there a way to just okay ICMP requests?

Download their IP list as a text file
Create an alias of type URL Table (IPs) and set the URL Table to http://uptimerobot.com/inc/files/ips/IPv4.txt with an update of maybe 30 days
Add a rule on WAN that allows ICMP from Source: your alias

That will allow ICMP from only the uptime monitor.  You can also set the Source to * if you want to be able to ping your WAN from anywhere.

Sorry, I should have edited my post to remove the first step.  At first I was going to recommend hosting the file on pfSense, but you can get it directly from the source using the alias so you don't need to manually download it first.
