Client or Server

We require remote access to a number of customer LANS and wish to use OpenVPN to create these connections pfsense to pfsense.

Logically I would think our LAN would function as the OpenVPN server and each customer site would be an OpenVPN client.

My only question is with this configuration can our office initiate and close the individual connections or is this a function of the client? Obviously if the client is required to initiate the OpenVPN connection then this would not work.
