When I get an email notification, it often comes out formatted in a manner that is difficult to read. Here is an example:

It also formats quoted replies in a manner that is difficult to read.

Would it be possible for the email notifications to either have less content (just link saying someone responded), or ideally to have content that renders properly?

        +1
Even just a line break between quotes would be a huge improvement. The emails are pretty much impossible to decipher if they contain more than just the reply text.

That seems to be all up to NodeBB. We do not have a ton of control there. There is an option to control the formatting of the notification e-mail itself and stuff around it, but not the actual content that it passes through that I can see. It's probably not viable to retain the full formatting there while also passing the content through via e-mail.

I am not familiar with NodeBB, if it is FOSS or commercial, but it may be worth asking on their support forum what the options are.
