I'm trying out the lab version on a server that has 2 disks, while I can pick both disks, is there a way to make this a RAID1? So in case one of the disks fail I'm not left with a broken system.

That's at the OS level which is essentially CentOS and the Anaconda installer. We don't have any documented procedure to do that as far as I'm aware, but if you can find instructions for CentOS 8 the same type of procedure should apply.
