WireGuard Slower than expected

A friend and I setup a WireGuard tunnel between our homes. The best speed we get is about 147Mb/s. There is a Netgate article suggesting we should get closer to wire speed.
Is there a tuning or troubleshooting guide? We have searched and found very little. What was found only mentioned the MTU and MSS values.The Setup:
7100 <-> 6100
1Gb fiber at both locations
Both sides speed test above 950Mb/s
No traffic shaping or QoS
Under 10ms pings
MTU 1420 (WG interface)
MSS 1380 (WG interface)
All other settings are default.
Tunnel testing is iperf computer to computer, although computer to FW had only slightly lower results
Neither CPU is busy, highest observed usage was 30% (is there a way to see core usage?)
