On my once working OpenVPN connection I now receive this error. Any idea on how to resolve this?

At least one suggestion I've received is to completely remove OpenVPN and start again.

So thoughts on where to go from here? How do I uninstall it, if that's the right approach?

From the error message, the client complains about a verification error of the server certificate. So did you check if it's still valid already?
Also check the CA certificate on the client.

When renewing the Certificate Authority, navigate to the Certificate section and proceed to renew the server certificates. It is important to note that when creating a new user for the VPN, avoid using an existing user, as it may not function properly.

Once you have created the new VPN user, test the functionality to ensure everything is working as expected.
