Updated using 23.09 dev branch, Now i'm 24.03 and I don't see the 23.09 branch anymore. How?

Yup, probably need more safety belts there. Now 23.09 is branched and beta is available the dev branch becomes master.
If you have ZFS just roll back to 23.05.1 and then upgrade to 23.09-beta.

What does it mean? I was on dev 23.09 channel and i made an update every 2/3 days. I was waiting for the final update. Now i'm on 24.03, so, is it possibile to update do 23.09? because on the update page i only see the 25.01 and 23 as possible branches.

At this point going from 24.03-dev to 23.09-beta would be a downgrade. By far the fastest way to get to 23.09-beta would be to roll back to 23.05.1 and then upgrade from there. If you are running ZFS you can just backup your config and then roll back to the BE snap created for 23.05.1.

If you have no means to roll back, not ZFS or a VM, then the fastest way to get to 23.09Beta is reinstall. Or just remain on the dev branch on that box.
