OpenVPN Split-Tunnel Zoom Traffic

I'm in the process of rolling out OpenVPN to ~150 users, all of whom are heavy Zoom users. I need to split-tunnel Zoom traffic (and only Zoom traffic) to go over the users home internet connection rather than route through our firewall so our internet connection doesn't get saturated.

Zoom provides this KB article with their split tunneling recommendations, but some advise on how to impliment would be appreciated.
