I was running some network performance tests and kept getting bottlenecked at 2.5Gb when hitting my router even though the interface is IX0 (10G) with several vlans.

So I stared wondering if I've got my switch tagging screwed up or something.

If I want to use IX0 10G NIC as a LAN Backbone between pfsense and my core 10G switch then what should my tags be set too? First time dealing with a setup that uses a backplane like this so I feel like I've got something configured wrong. Added Picture for reference.

The 10G NICs, ix0 and ix1, on the 7100 are not part of the on-board switch so you would not configure them there at all.

You would add the VLANs under Interfaces > VLANs on ix0 directly and assign them as new interfaces.
