The thermal data shows a data of 31 Aug and isn't updating. All the other Monitoring graphs work just fine, only the Thermal graph is broken:

Any ideas how to prompt it into life or delete the old data so it can start again?

It's probably trying to graph a value that no longer appears for some reason. Or potentially trying to graph something that was missing. If you reset the data it will start graphing again. You can remove only the thermal data by just deleting the file /var/db/rrd/system-sensors.rrd.
If you're experienced with rrdtool you can probably edit the file to add/remove the field.

Oh and then restart rrdupdate. Disabling and then re-enabling graphing in the gui does that.

@RobbieTT did you come from 22.05? If so, this thread might help.

Thanks guys, data reset as suggested and the issue was fixed. 👍
