Now that I have my IPSEC/IKEv2 vpn up and running, I was wondering what people think about the security of this form of VPN as compared to OpenVPN?  I have both vpns working, and I am finding that getting connected to IKEv2 is almost instant, where connections to OpenVPN do have a lag of several seconds before everything is set up.  So I would prefer to use the IKEv2 server, but not at the expense of security.

I believe IKEv2 security protocol is what most of the paid vpn apps do use. So, based on that i think it is quite feasible to use.
