the pfsense trafic shaper shapes network protocols not ip's
        so it wil be this

        default 80%
        mail 5%
        p2p 15%

Are there any addons or something so you can limit the traffic for specific IPs? If not, is it something that is going to be added in the future?

You can do this but you have to create a queue per host and add rules to send that traffic to these queues. When and if your requirements will be supported is hard to say atm but it definately won't be before 1.1.

(ab-)use the voip queue for that. run the shaper and add an IP for the voip queue. after it has finsihed edit the queue and set the traffic limit at upper limit and dump the realtime value. set the priority lower. that's it. then copy these for as many clients as you need. however you have to keep the math in mind or you'll get an alert because of assigning more bandwidth than you have.
