Can I control traffic from my VPN clients? Can I watch who is connected and his' current traffic? And can I disconnect (manually) VPN clients?

It's possible to delete SAs if you are talking about IPSEC, however, the tunnels we be rebuild at once if there is traffic bringing it up. For PPTP it's not possible to disconnect single users. However, applying userchanges or saving PPTP settings will drop all as the pptp server is restarted.

PPTP User Status can be viewed at Status>Systemlogs, Tab PPTP.
You cannot really view you PPTP clients traffic. Maybe pftop (option 9 at the shell menu) can show you realtimevalues, never have used it for PPTP users though.

Possibly, depending what you want to see but I don't know how it displays PPTP users.

I guess you have to just test it out for yourself then.
