Is it possible to configure pfSense to keep logs after reboot or have the logs redirected to a syslog daemon?  I like this wouldn't be feasible on the WRAP/Soekris line but would be nice for my normal PC pfSense boxen

Yes, you can send the logs remotely.  It is in the log settings page.
