Subnet addressing method

We are on the way to replace some old Zyxel Firewalls with pfSense. Along migrating we encountered a problem with de definition of subnets across the tunnels. On pfSense you have only the choice between "Single host" (single IP address),"LAN subnet" (unclear) and "Network" (CIDR style) for the local side network and only "Network" (CIDR style) for the remote side network. On the Zyxel you have the possibility to enter address ranges like "192.168.0.1 to 192.1680.0.254" or "192.168.0.0 to 192.168.1.254" which cannot represented in the current release of pfsense.

Yes it can, the first example 192.168.0.0/24 and the second is 192.168.0.0/23.
