    Gentleman,
    I'm fairly new to pfsense

    Ive  figured out most things:) But at times I draw blanks on the services on PFS.
      As to which ones are on by default and not on.

    DNS forward being one.

    Is there a list ,listing such info on the startup guide?

          To be honest there is no one list that shows you what defaults to on or off, not even in the book.

          If you want to know the defaults, boot a livecd or install on another system (Or VM, VirtualBox works well) and check the defaults out first-hand.
