Is the difference between 1G/2G/4G versions appear to system RAM memmory size? I have 1.2.2 version and as far as I remember when I was installing there were no such options to chose then. So if my pFsense machine has 1GB ram I should chose version 1.2.3 1G for upgrade?
BTW. What would happen if I'd chose wrong version, had anyone tried it yet?

It's the size of the CF card you are using, not the amount of memory in the machine. You can run a smaller image than the size of the CF card. This might provide longer service life if the card does proper wear leveling.
