Why should Squids "Memory Cache Size" (RAM) not exceed 50%?

I'm looking at the Squid notes
Memory cache size: The amount of RAM that squid should claim for cahcing. Use as much as can be spared, as this is much faster than caching to disk. It should not exceed 50% of the installed RAM, however.
And I'm wondering why I can't use more than 50% of my total memory for Squid?
My system has 2 GB of RAM and is currently using 30% of it. I'm only supporting about 10 devices on the network and only 5 users browsing the web. If my ram isn't being used for anything else, why is it recommended that I don't use it for Squid?
