I've purchased the pfSense book from Amazon and it's extremely helpful but it doesn't explain TCP/IP (eg. routing, etc) in as much detail as I would like.  This is not a fault at all of the book but just that I need some supplemental information.

The biggest confusion I have is understanding subnets and how routing works between them, etc.

I have access to Safari Online (the O'Reilly online book repository) and I'm reading The TCP/IP Guide (from No Starch Press) but it's a little too detailed.

Does anybody of nothing in-between to help me setup a home network with one or two subnets (for my development/public web servers, etc)?

I suggest you read http://en.wikipedia.org/wiki/IP_address and http://en.wikipedia.org/wiki/Subnetwork ignoring anything relating to IP v6. It would probably also be worthwhile reading some of the linked papers and articles especially http://www.cisco.com/en/US/tech/tk365/technologies_tech_note09186a00800a67f5.shtml  (IP Addressing and Subnetting for New Users).
