Categorizing traffic types?

Im new at this and would like to know the best way how to make the pfsense box prioritize traffic

I would like to give the priority to

1. out voip phone net talk duo device assigned to a static ip
2. gaming to reduce latency warcraft and others
3. kids voice chatting in games for clarity
4. web browsing
5. pandora, youtube etc.
6. torrent type traffic
