This is what I'm trying to accomplish:

Client –------ PPPoE modem---Pfsense router / OpenVPN server ---- LAN

The configs work perfectly fine with a cable modem and no PPPoE modem in the picture.  I understand you need to put the modem in bridge mode and let the Pfsense do the authenticating.  What all do I have to turn off on the modem in order for it to do accomplish this, as far as NAT, DHCP, DNS, etc.  Also, on my modem, there is a "PPPoE relay" mode, is this bridge mode?  There is nothing else under WAN that says bridge mode. Can somebody point me to the right documentation or guides to troubleshoot this PPPoE isssue? Thanks.

Most likely "PPPoE relay" is the correct choice - what make / model modem do you have?

Netgear adsl2+ DM111PSP.  I have very little experience using PPPoE/DSL

PPPoE relay is not bridged mode. That's for half-bridge mode I believe. You need to change the device mode to "Modem Only".
