I just bought one of the VK-T40E routers from the pfSense store.  It has 8GB of storage via SD drive.  I am not debating Snort/Squid/etc.  Can I just plug an 80GB or so USB drive in and use it for the storage that these types of packages need?

I assume you typo'd 'not' and it should read 'now'?
There's no way to use external storage directly. Some users have done it by adding custom scripts etc.

While technically possible, it's unsupported and would require manual work (to format the drive, the keep it mounted, and to direct packages to use the space).

You're better off using an mSATA inside the device instead of the SD card, rather than an external drive.

You can order the mSATA for that device preloaded with pfSense, drop sales@pfsense.org a line and ask for info.
