How can I edit sudoers in pfSense?

The sudo package is not included in the base system. You can install the sudo package from System > Packages and then manage it in the GUI under System > Sudo.

If you want to install it manually using pkg_add or similar then just run "visudo" to manually edit the sudoers file, which will end up under /usr/local/etc/

I am editing through visudo, but after reboot the changes are rolled back. How to save sudoers settings?

Do not use visudo. Use the GUI, System > sudo
