Why are there only a few (seemingly random) hostnames remembered in the DHCP leases status table? Like, from ~120 (expired) leases, only ~4 have a hostname in the table. Is that an option the dhcp client can tell the server? Thanks!

That is up to the client. If the client supplies a hostname, it is shown there. It would also be shown if it is a static DHCP lease set with a hostname.

Most (like 99%) DHCP clients do provide a hostname. Only a few of them show up in the table once expired though. So, only a few of the hostnames provided are remembered. Not a big deal, just a strange detail.
