I would like to create a pfSense on a Chromebox that only has one gigabit port using VLANs.
I know this kind of setup is usually called a router on a stick.

Is it possible to connect my modem to my switch, and the switch to the Chromebox.
I have a Netgear GS724TS but I'm unable to update the firmware, and it seems to have poor VLAN configuration on its current firmware (V3.1.0.1)

      For example:
WAN port tagged with VLAN 10 traffic
Chromebox port as a trunk port

      Has anyone here tried this?

PS. I would also like to virtualize this using XenServer alongside Ubuntu as a SAMBA server.
XD I know it's ambitious but I wouldn't put anything into service that wasn't 100% stable

Yes you can do that.  Yes you can do that via a vm.  As long as your switch supports vlans it will not be an issue.  Unless your understanding of vlans and how tags work is limited.  Then yeah might as well be trying to do brain surgery after taking a cpr class ;)
