Is there a log for pkg saved anywhere?  A google search says pkg in FreeBSD logs to /var/log/messages but my pfSense box has no such log file.  Trying to get a handle of what I've done on the system manually.

Look in /conf/ and you'll find pkg logs.

Can't find any log in /conf other than one file from a package remove I did through the GUI.  I've installed a few packages my hand at the command line.  Was hoping for a log of all pkg activity since install.

If you run it by hand in the console then no, it doesn't log that anywhere as it's output straight to the terminal.

What are you trying to track down?
