Hi I looking to build a pfSense build and I was wondering if I should use an SSD or a HDD. If I use a HDD what kind should I use? NAS HDD, Data Center HDD? Which one? Please help me out.

HDD is fine, get the smaller 20GB, 40GB, 80GB. Although the faster HDD (3Gbs/6Gbs) tend to have more storage. You will most likely not need more that 4GB for routing and switching. If you're going to run some type of QoS /VPN /firewall Filter, then it depends on your how much filters. If you're going to create 1000 rules and log every rule as traffic goes in and out of your firewall, then you should get a larger hard drive.
My guess is you are new and would like be prepare for future add-on. Get a 2.5" 80GB Enterprise HDD, I've not found a regular spinning Enterprise drive smaller than 80GB.
If you're going to get an new 120GB SSD drive, I would rather consider 8GB or 16GB Industrial SLC SSD. There are lots of Industrial/Enterprise SLC SSDs out there in 4GB/8GB/16GB versions.
Most advance users who do QoS /VPN /firewall Filter already know what they need to do, such as off loading the logs into a storage server.
