I am about to start a new job working in China. Internet will be provided either wireless or wired. For wired, I just continue using this: Ethernet from wall to pfsense (qotom i5-5250U 8GB RAM and 120 GB SSD) to Ethernet port of my laptop. Here is my question, do I use the same system for wireless but use an ap? That is Ethernet to qotom to ap that broadcasts the WPA2 AES so that I can use both my Android tablet / smart phone and laptop?

You may insert only a small miniPCIe WiFi card if there will be a free slot in that pfSense box and then you have also internet via WiFi
to all your WiFi devices at home. Compex WLE200NX and UBNT SR71-E are well known WiFi cards for that action. In China perhaps not
to bad to install OpenLDAP and Radius Server onto your pfSense box to secure your entire network from intruders. -

If I use a very secure wireless password, say 20 digits will that be secure enough? Setup: Ethernet to pfsense (qotom) to wireless AP.

You don´t type this password again and again in, so it could also be at least perhaps 63 digits long
as this is may for the most devices the barrier for that. WPA2-AES-PSK or WAP2-AES-enterpriseSetup: Ethernet to pfsense (qotom) to wireless AP.
Is a good choice in my eyes for sure and will be able to let you use the latest WiFi standard likes ac WiFi for sure!
But as said for wireless and wired devices I personally would set up a Radius Server with certificates,
because the AP is behind the firewall, inside of your network! -

Debian Linux on a small Raspberry PI 3.0 or on a Netgate Minnow TurBot and OpenLDAP on top or with nice graphical user
interface (GUI) together with TurnKey Linux. TurnKey Linux & OpenLDAP Packet- Radius Server 3.0 is announced to be coming as a packet for pfSense directly!
- The Captive Portal with voucher system will be able to be used for guest WiFi.
