Noob question Regarding DNS Resolver

Hi guys, I am a complete noob just trying to learn the basics. I have a few questions:
I have DNS resolver enabled with DNS Forwarding disabled, it's working well. When the Resolver does have to venture out to resolve a request, will it query the DNS servers I have set under General -> DNS servers at all?
I am running a DNS leak test and my WAN IP address is being returned, is this normal?
Also, is there a way to globally set hosts passing through a VPN gateway/tunnel to only use a specific DNS server? Or do I need to manually set the DNS servers in each static DHCP entry?

No that is not how a resolver works.. It walks down from roots to get to the authoritative NS for the domain your wanting find a FQDN in
Yes it is normal for your wan IP to be listed - since that is what will query the NS.
If you want a client to query dns 1.2.3.4, then you would set the client to query that dns.. How you do that is up to you, be it your default dhcp setting, or specific in a dhcp reservation, or static on the device itself.
