Just installed a new SG-1100, and so far so good. I have a simple question with what I suspect is a simple answer, although I could be wrong.

I added the Thermal Sensors widget to the dashboard but it just seems to be stuck on "(Updating)". Does the SG-1100 have the internal sensors to support this or am I on a fool's errand?

AFAIK there is no Thermal Sensor for the SG-1100. Normally it would also show out of the box in the "System Information" Widget.
        See my SG-5100 for example:

        Missing for the SG-1100:

Indeed, there is no thermal sensor in the SG-1100 to measure so it cannot be displayed.
