Routing 2 vpn connections

I have been thinking about if it is possible to have two vpn connections on my lan.
Currently I have NordVPN providing VPN across my LAN Network. I am wondering if it is possible to add a second vpn connection but this time rather than the connection covering the entire LAN make it specific to one IP address? -
Sure, you can have as many OpenVPN client connections and Policy Routed Rules as you want.

Great. So I have set up the client by copying the
client details for the main LAN covering VPN. I have done the same to the other settings I created from the guide on the NordVPN website. Everything for the second VPN Client is currently disabled as I don't know how to route this second vpn connection to specific IP Addresses ONLY. if anyone can guide me I'd appreciate it. -
How did you route the LAN net?
Basically the same, just as source the client IP and change the gateway to the new VPN.-Rico

so I have managed to get the second vpn connection up and working, however I have no idea what devices are using the second connection.
I have used ip location and on the devices I have looked on it is saying the vpn location for the first VPN connection including the device I would like to solely use the second VPN connection/location.
if that seems badly described, simply I would like :
VPN1 covering all Devices on LAN.
VPN2 covering 1 IP address on LAN, but no other devices unless I specify to use this second VPN
Forgive me if I am being stoopid, I am very new to all this. -
