IPSEC tunnel - remote lan a public IP address

Having and issue where the site to site tunnel is established but the traffic is still going through the internet instead of the tunnel.

any suggestions would be appreciated.

Check your firewall rules and make sure the traffic isn't hitting a rule with a gateway set. If so, make a new rule above it to pass to the VPN destination(s) without a gateway set.
