      Can someone help me understand what I'm missing here. Obviously there's an issue with the Public IP changing when connected to EVPN as the issue resolves when I disconnect. I thought maybe it was because I was missing a UDP FW Rule but that wasn't it.

        It's probably because you're sending all your traffic across the VPN, including the registration from the plex server.
        You probably want to exclude the plex server from the policy routing so it just uses the WAN directly.
