      From what I have gathered from netgate documentation we cannot bind the packet interface in the traditional way like Open VPN.

      Goal: Use floating rules to direct traffic out the non-default gateway.

      Is there a way to make packets with source wg0 ONLY go out my second WAN? I've tried some floating rules
      (UDP/wg-Server-ip:port Gateway: desired WAN)

      But I couldn't get it to work. The best I can get is a few packets that will hit from that interface and then wg0 goes down until the floating rule is disabled.

      Static routes is not a good option for me because the server IP is also used for other things carried on primary WAN.
