We currently run a pfsense firewall with this version:

    login-to-view

Why is the update forcing installation of pfSense Plus and not CE? Here is my system update screen:

    login-to-view

Since I have 2.4.5.p1 installed, shouldn't I be updating to one of the CE versions as shown below, i.e. 2.5.X and not 21.x?

    login-to-view

In any case, my main question is does it matter if I move from 2.4.5.p1 to 2.5.x or from 2.4.5.p1 to 21.x? Can I expect a similar update process and functionality? I have read the difference between the CE and Plus but just not sure how it applies to my particular case.

Because you're running a genuine Netgate device. All Netgate products run pfSense+ now, formerly known as PfSense Factory Edition. Only homebrew folks use CE, aka Community Edition.

Yes, it's because you are running the Factory Edition.
On that particular hardware you can re-install as CE if you really wanted to but I would not recommend it:
