      I've just installed pfsense, and at boot I get an ascii version of the pfsense logo scrolling off screen very fast. A bit later the console is normal again. Is this normal?

        What sort of console? Video or serial? If it's serial, your terminal width/size might not be correct.

          It's a serial console. Which dimensions should I use?

            80x24 but I did see one case where I had to make it 81x25 or larger to prevent it from doing odd things like making the spinner draw each iteration on a separate line. IIRC it was something in the PuTTY settings I had at the time but I can't recall what that was.
