I started with 2 vmxnet3 NICs, one for WAN and the other for LAN and then I set up an OpenVPN on a third vNIC. Then I decided I wanted to add another LAN on the inside so I added a third vmxnet3 NIC but it doesn't show up.

Could anybody shed some light on the correct process to fix this?

Did you reboot after adding the NIC? You can't add NICs "live" to pfSense (or even FreeBSD IIRC)

            Thank you both very much!
I added the NIC and then rebooted the first time. Now I've followed your advice which worked like a charm.
