Setting NTP via DHCP

Looking for advice ... my pfSense installation is also a DHCP server with 50+ static leases. Now I am hoping those devices use my hosted NTP service, too. However, after I changed the DHCP server configuration to add the NTP server 192.168.1.1, it appears to me as though none of the devices (e.g. Macbook MacOS, iPhones, Amzn FireTV, etc.) are honoring it, and just continue to use whatever they have for a default (e.g. time.google.com, opendns, or time.google.com). Is it typical that DHCP'd devices don't pick up NTP settings? Thanks in advance.

Yes, yes, I didn't add this, because we use 53 inside, only 853 outside (DoT)
(and the DHCP with static entries propagates pfSense as the only DNS server on the network)
