      Currently, my Velop system is in bridge mode and on the same subnet as everything else on my home lan. This disables several of the features I would want to have a mesh WiFi network for, like client and node steering. Node steering is not that important, because I have an Ethernet backhaul for each of my Velops.

      If I take the Velops out of bridge mode, I will have additional features, like HomeKit compatibility and others I have never played with. Is there a way to accomplish that in an intelligent way without introducing double-NAT? I would imagine, I could set up some rules on pfSense that would shield my LAN from clients connected to the guest SSID.

        You can have two subnets in pfSense on different interfaces and route between them without NAT. There should be no reason to double NAT there unless it's a software restriction in the wifi devices.
