Some advice on how to go about using Pfsense on a portable workstation.

I have a portable workstation running windows.
I need to guarantee that my network is secure and private. especially with regards to software's that call home and Microsoft spying/telemetry, in short, all data packets going out….I know I know, I wish I could move to Linux but it is simply not viable in my line of work.
I figured, Microsoft does not respect user defined rules but a firewall (pfsense) at a router level will.
but what about when I am not at home. say using the portable workstation at friends or a café? I am thinking of running pfsense virtualised using hyper-v.
but since the network is most likely to be my phone or a café and no means of routing things through cables, how can I achieve this? is it possible through hyper v, to get pfsense to pick up a Wi-Fi signal to power its own network and pass it to the host OS as a network that is separate from my phones Tethering Wi-Fi, all the while getting the same security as if I was at home with a router running pfsense.
Lastly, what are the pitfalls of running pfsense in a virtualised environment as opposed to the bare metal using something like Protectli Vualt Firewall. Thanks!

It is possible to do that but using a type 2 hypervisor like hyper-v is not ideal because it relies on the host OS for it's own security.
A small portable router would be better IMO but pfSense would really only fit that role for wired access. If you need to use it as a wifi client you would probably be better served by, for example, OpenWRT.Steve
