Now that ZFS is the default file system when fresh installing pfSense Plus, does that mean that we have snapshot management/configuration built into the GUI? Or do we have to fall back to command line to do snapshots?

There is no interface for ZFS snapshots yet. There is a new ZFS widget on pfSense Plus but currently it is only for viewing status information.
