I searched the forum and found little available about setting up a ProtonVPN on a pfSense home built router.

ProtonVPN supports wireguard, as well as some other:

"You can install Proton VPN on routers that support OpenVPN as a “Client” (instead of as a “Server”). You can also use routers that support IKEv2, but L2TP is not supported by Proton VPN."

The purpose of this router is to be a second router, separate everything, to serve a VPN connection to whatever is connected downstream of it.

Can anyone share experiences and what protocol I should use?

first, try openvpn because that is well established and wire guard is new. the ProtonVPN service website should have setup instructions and OpenVPN config files that you can use.
