Need help figuring why my internet gets slower and slower over time.
Only fix is a reboot, so I end up having to reboot daily. This can't be right.
My memory and CPU usage shows low (under 5%) so there must be something else. Basic setup with only pfblocker (IP only) plugin and IPsec VPN. No VM's
If on for a while my speedtest shows 70/8. Reboot and it goes back to 500/40.
Using Intel 10GB NIC's without offloading
      Any ideas?

It sounds like that "something" runs full and with a reboot it will be flushed and all is fine again.

@dobby_ Yeah I would suggest flushing states instead of reboot @dalicollins.

I would also check the Status > Monitoring graphs to see if there is some resource being obviously exhausted.
